At the buffet-like Market Table, Fogo de Chao offers an extensive assortment of vegetarian-friendly dishes such as seasonal salads, soups, vegetables, and charcuterie. As of November, its average unit volumes were more than $10 million, putting it in Cheesecake Factory territory. Fogo has 55 domestic restaurants today but believes it can one day reach as many as 300.
