INGREDIENTS:

Normal serving for 6 people

  • 4 boneless, skinless chicken thigh fillets
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 1 tablespoon of olive oil (divided)
  • 1 medium yellow onion (chopped)
  • 4 cloves of minced garlic (or 1 tablespoon of minced garlic)
  • 1/3 cup of dry white wine (or chicken stock/broth)
  • 8 ounces (250 g) of sliced brown or Cremini mushrooms
  • 1 quart (1 liter) of chicken broth (or stock)
  • 12 ounces (375 ml) of evaporated milk*
  • 1/3 cup of milk
  • Additional salt and pepper to taste
  • 10 ounces (300 g) of uncooked penne pasta (slightly over 4 cups)
  • 1 cup of freshly grated parmesan cheese
  • A handful of chopped fresh parsley

INSTRUCTIONS

  1. Begin by seasoning boneless chicken thigh fillets with dried basil, salt, and pepper. Heat olive oil in a large saucepan over medium-high heat and sear the chicken until golden brown and fully cooked. Set aside.
  2. In the same pot, sauté chopped onions and minced garlic in olive oil until the onions turn transparent. Pour in white wine and let it simmer until it begins to reduce down. Next, add sliced brown mushrooms and cook for a few more minutes while stirring occasionally.
  3. Add chicken broth, evaporated milk, regular milk, salt, and pepper. Bring it to a gentle simmer and add uncooked penne pasta. Cook for 15 minutes or until pasta is al dente while stirring occasionally.
  4. Stir in fresh grated parmesan cheese until it melts and the sauce becomes creamy. Take the pot off the heat and allow the sauce to thicken for 5 minutes. Cut the chicken into strips and mix it with the pasta.
  5. Sprinkle some fresh chopped parsley and extra parmesan on top to serve. Enjoy your creamy one-pot mushroom chicken pasta meal!
